I was looking for a scrumptious summer recipe and I finally found one. I got this off of www.EatingWell.com website and it definitely looks like something both the meat eater and the vegetarian can enjoy. Remember if you don’t eat meat, just use tofu or Seitan (I prefer the latter). Enjoy! Ingredients 1 tablespoon plus 1 teaspoon canola oil, divided 1 tablespoon ground cumin 1 teaspoon kosher salt, divided 3/4 teaspoon freshly ground pepper 1 16- to 18-ounce tube prepared plain polenta 1 pound boneless, skinless chicken breast, trimmed (or one pack of Seitan or other protein substitute) 2 nectarines, halved and pitted 1 pint blackberries, coarsely chopped 2 tablespoons chopped fresh cilantro 1 tablespoon lime juice Hot sauce, to taste Preparation Preheat grill to medium-high. Here is a healthy recipe that will have your taste buds popping! Vegetarians in the house, I wish I could give a suitable substitution suggestion for this one, but I’m afraid I’m drawing a blank on this one. But not to worry, I’ve got something special coming up for you next week on the “burger/pattie” front! Healthy fact: Turkey contains Tryptophan which is closely related to the Seratonin in our brains that can help relax us and even make us feel a little sleepy. The Tryptophan in Seratonin can also give off good feelings. Enjoy! TURKEY TERIYAKI BURGERS 1 package turkey meat 1 egg 1 cup teriyaki 1 cup bread crumbs (any flavor) Put teriyaki in large bowl. Slowly add bread crumbs and mix. You don’t need to use the entire cup of bread crumbs. Mix teriyaki and crumbs very well until a brownish moist bread crumb pile results. Add turkey meat and egg to the large bowl. Mix well. Use a mayo lid or pancake molder to form the perfect shaped burger. Put the burgers on a grill at [...]

The following is a recipe for Vegan lettuce wrap using Seitan a gluten protein that has the consistency of chicken. I have often been asked about it’s taste since it IS vegan. In my humble opinion the texture and taste is much more palatable than that of tofu. So if you are looking for options other than tofu or tempeh, try this! Of course, for those who want meat with their lettuce, just substitute chicken or ground turkey (or the meat of your choice) in place of the Seitan. Seitan Lettuce Wraps Ingredients (use vegan versions): 2 cups minced seitan, 1 cup bamboo shoots, minced 3/4 cup mushroom (prefer straw) 2 cloves garlic 1/4 cup minced onions 2 tablespoons soy sauce 2 tablespoons brown sugar 1/2 teaspoon rice vinegar 1/4 teaspoon corn starch 3 tablespoons peanut oil Directions: Heat 2 tablespoons peanut oil in wok. Stir fry [...]
